This brine is the fiery cousin of Sweetwater Spicer Company’s Apple Chipotle BBQ Bath, loaded with smoked habanero peppers, ancho chilies, onion, garlic, and balanced with the sweetness of apple juice. This is their best brine recipe… if you can handle it. Amazing, lip numbing, baked habanero brined hot wings are perfect. I’ve been told that a smoked pork tenderloin in this brine is so good one could mix a drink with it – that’s a high compliment for a piece of meat in my opinion.
